Resident’s recipe earns honor MARLBORO — Amy Scotti is sharing her favorite recipes with other hometown cooks at Just A Pinch Recipe Club, the new online community created for and by cooks in hometown America. Scotti’s roasted beet, goat cheese and pecan salad recipe was selected from among thousands as a blue-ribbon stand-out on the club’s Internet website, www.justapinch.com. To land the distinction, Scotti, who is a resident of the Morganville section of Marlboro, served up a creative salad recipe that was tasty and easy to prepare. Janet Tharpe, hostess and recipe tester for Just A Pinch Recipe Club, awarded the blue ribbon. “I used to hate beets, until I tasted fresh ones. This salad highlights the different textures of the ingredients as well as the sweetness of the beets. The dressing can be as sweet or as tart as you like,” Scotti said. Scotti’s recipe, along with thousands of others, can be viewed, printed and shared at no charge through the online club. Scotti is one of several area residents participating in the club, which is billed as “America’s Greatest Recipe Swap.” Members can post family recipes as well as search, print, chat about and try recipes submitted by other members. They can also save recipes to a personal online recipe box, create grocery lists, plan meals and print hundreds of grocery coupons. In addition, members can create or join groups based on existing relationships (families, church and civic groups, etc.) or affinities such as diabetic meals, crock pot cooking, budget meals, as well as swap recipes within their groups. “We continually add new features to the club based on the feedback of our members. It’s because of people like Amy Scotti, who is proud to share her favorite recipes with other hometown cooks, that the club has become so popular and is growing so fast,” Tharpe said.
